Findings
Summary
Utilizing advancements in computer technology, a bilingual interactive
multimedia (IMM) dietary assessment tool that mimics a 24-hour
diet recall has been developed. Food choices were determined by
examining 191 individual 24-hour recalls from the Colorado Expanded
Food and Nutrition Education Program and from the 1982-1984 Hispanics
National Health and Nutrition Examination Survey. Several phases
of testing were used during development to determine the introduction
format, food groupings, graphics, audio, and program flow. In
the final format, the IMM recall represents a multiple-pass method
in which users first choose foods from 172 quality photographs,
followed by food variety, cooking techniques, and portion sizes.
Lastly, users may add and/or delete foods on a review screen.
A corresponding database generates a nutrient profile comprised
of 20 nutrients and dietary constituents. Data have been collected
from comparative validation testing, whereby a 24-hour recall
interview administered face-to-face was the criterion assessment
method. The outcomes have shown strong agreements between the
two assessment methods. The only significant difference found
among the dietary constituents was for Vitamin C. The IMM dietary
recall is well-liked by users, and the reported data may be as
accurate as current dietary assessment methods while the need
for literacy skills is minimized.
